Summary: Ensures the department is running in a safe, productive manner. Focuses on production, quality and people. Identifies, investigates and works to solve problems that arise. Works closely with department employees and reports any issues to the Ricotta Manager and/or Associate Manager.

(Phone calls, voice mail, paperwork, meeting presentations.)6.\tMeets regularly with shift supervisors and sanitation 7.\tSupervisor to stay informed about all issues arising in the department.8.\tWorks with all departments to ensure proper adherence to GMP, GSP and QC policies and procedures 9.\tActively work on production floor to facilitate the exchange of data between various departments. 10.\tOperates with other management personnel in formulating and establishing company policies, operating procedures and goals. 11.\tSuggest and debate alternative methods and procedures in solving issues that arise. 12.\tIdentifies strengths and/or weaknesses of the employees and demonstrate the ability to train and coach to strengthen weaknesses and utilize strengths. 13.\tCollects and provides any data necessary for budget creation and implementation.14.\tParticipates in operating budget, goals, and objectives of the department and works toward meeting and/or exceeding these expectations.15.\tDepartment employee meetings conducted on a monthly or bi-monthly basis.16.\tResponsible for hiring and scheduling required within the department, including temporary staff if necessary.17.\tMaintains open communication with all employees including department managers.18.\tImplement special projects and procedures as directed.19.\tMaintains departmental sanitation and safety operations. Enforces all GMP's, Quality, OSHA, and AIB specifications. 20.\tMaintains employee files including payroll, attendance record, vacation, tardiness, disciplinary review, and annual performance reviews.21.\tFind cost savings within the department's daily parameters.22.\tWorks close with maintenance on a variety of issues related to equipment, department maintenance and preventative maintenance programs.23.\tAware of and practice Plant's Good Manufacturing Practices (GMP) as well as Good Sanitation Practices (GSP).
Requirements
Qualifications:
*\t2-3 years of experience in packaging/manufacturing setting preferred.
*\tPrevious food manufacturing experience preferred.
*\tAbility to perform a multitude of tasks.
*\tKnowledge of computer software: Microsoft Word, Excel, Power Point, Outlook.
Education and/or Experience:
*\tHigh School Diploma/GED required.

From your PASSION to ours
Candidates will be responsible for running and cleaning multiple pieces of equipment which include the cheese molders, cooker, DMC and brine system.
From your EXPERTISE to ours
Key responsibilities for this position include:
1. Ability to start-up, maintain sanitation, perform CIP, shutdown and operate machinery. Also to include troubleshooting machinery when needed.
2. Monitors key processing indicators such as time, temperature, pH, moisture and weight.
3. Maintains production in a continuous flow operation.
4. Will be in control of daily production and sanitation paperwork; filling it out properly and making comments of any non-compliance results.
5. Ensures Food Safety and Security as required per the Plant's GMP (Good Manufacturing Practices) and GSP (Good Sanitation Practices) Policy and Procedures.
6. Performs other work duties as requested by the Mozzarella Production Supervisor.
7. Responsible for working efficiently and safely to produce a high quality product.

Focuses on production, quality and people. Identifies, investigates and works to solve problems that arise. Works closely with department employees and reports any issues to Ricotta Production Manager.
Essential Duties and Responsibilities include the following. Other duties may be assigned.1. Ensures department is running in a smooth and efficient manner.2. Assist operators in set up and start of production.3. Ensures quality control checks are being performed by the departmental employees.4. Verifies proper recipes are being used for production.5. Completes and maintains appropriate paperwork/reports.6. Verifies operator logs each hour with signature.7. Verifies that moisture checks are being performed on all lots.8. Tours entire room on a half-hour basis.9. Ensures sufficient manpower is scheduled for next day's activities. Make adjustments if necessary.10. Ensure that there are sufficient supplies (salt, stabilizer, Vitamin A, etc.) for the day.11. Maintains employee records including attendance, and write-ups as needed. 12. Maintains an open line of communication with all employees in ricotta department.13. Identify, investigate and work to solve any problems that arise in the department. 14. Ensure all department employees adhere to all GMP and QC policies when in the plant and surrounding environments.

During any emergency situation the Guard Building is the hub for communication and management of unwanted events. Summary: Responsible for a variety of tasks that require knowledge and/or ability to learn packaging equipment and assist when needed on major utility systems. Ability to progress and desire to learn of high importance.

1. Maintains machines with respect to bearings, assembly, disassembly, power transmission, rigging, and lubrication.
2. Effectively completes bench work utilizing common hand tools.
3. Can work effectively with an upper-class mechanic to work on electrical systems and components.
4. Learns to do rudimentary pipefitting of water, steam, and air lines with steel, plastic, and copper pipe materials.
5. Performs routing preventative maintenance on designated equipment. Will assist upper class mechanic on major overhauls.
6. Learn to identify potential issues and report these to the necessary persons.
6. Trains and learns most shop equipment and machinery.
7. Works with upper classification mechanic on job layouts and ordering of materials necessary to complete job.
8. Assists in troubleshooting and diagnosing most machine failures.
9. Prepares for work daily with complete set of hand tools as mandated by the supervisor's list.

Summary:
Responsible for the proper maintenance and sanitization of all silos, milk lines, cream lines, blend lines, whey lines, separators and cream tanks.
Essential Duties and Responsibilities include the following. Other duties may be assigned
- Manually disassembles and cleans samplers, activators and valves.
- Checks and replaces worn gaskets and o-rings.
- Replaces QMI samplers when needed, not less than once per week.
- Ensures silo's are inspected and initialed before reassembling. Check titrations document.
- Empties and washes silos every 72 hours.
- Cleans whey separators with a wash daily.
- Assures whey and cream samples are at the laboratory as scheduled every two hours.
- Cleans all milk, cream, whey, and blend lines at the end of each day.
- Checks with Supervisor for silo rotation for pasteurization.
- Maintains tank room ensuring cleanliness. Hoses rolled up, sanitizes pipes and ports capped.

1. Produces high quality products in a consistent manner.
2. Ensure proper volumes of each raw material are entered into the kettles/processors.

9. Cleans and sanitizes equipment and lines.
10. Ensures homogenizers are at proper pressures.
11. Documents mass meter numbers where necessary.
12. Maintains a clean and sanitary work area.
13. Is aware of and practices Plant's Good Manufacturing
14. Practices (GMP) as well as Good Sanitation Practices (GSP).
15. Upholds all rules pertaining to confidentiality of information regarding Sorrento products and recipes

1. Perform pre-shift operational inspection to determine condition of filling machine.
2. Sets up filling machine and related equipment for product to be run.
3. Monitors filling machine during line operation to ensure proper operation and efficiency.
4. Troubleshoots and resolve operational /mechanical problems in a timely basis to ensure an efficient, smooth flow of product.
5. Monitors package seal impressions, integrity, and product giveaway.
6. Changes film in a timely manner to fashion to ensure a continuous, efficient flow of product.
7. Perform product changeover(s) as needed.
8. Performs preventative maintenance on a daily/weekly schedule as required.
9. Maintains an open line of communication with production palletizer, and lead person/supervisor.
10. Perform proper sanitation of the filler before introducing the product.
11. Continuously monitors for abnormalities or inconsistencies in the texture, shape, color, odor or foreign material in or on the product.
12. Continuously monitors for proper code date, lot number and operator code product to be packaged.
13. Familiarizes self with all standard operating procedures.
14. Continuously monitors for proper product temperature during filling.
15. Continuously monitors the cup wash, ensures that it is on and working correctly.
16. Continuously monitors the cooling spirals and investigates any problems.
17. Keeps work area neat and clean at all times.
